Which kind of teapot is better for brewing tea?
Zisha teapots are made of a unique material with a double-pore structure. As they are left unglazed inside and out during firing, their pores are large and absorb the tea's aroma and flavour easily. The pores expand rapidly when boiling water is poured in due to the principle of thermal expansion and contraction. This enables the various substances in the tea leaves to be retained within the teapot. As you can imagine, when we brew tea in a purple clay teapot, the flavour of the tea that we inhaled previously continues to be released, mixing with the newly brewed tea that we consume. At that point, the tea will no longer taste like the original brew.Instead, it becomes a mixture of flavours from unknown sources, leaving the tea soup unbalanced and impure.
White porcelain and glass teapot set have a smooth, delicate finish and do not absorb the aroma or flavour of the tea. Tea brewed with these materials essentially retains the purest flavour. However, teapot designs often feature small spouts for aesthetic reasons, resulting in a rounded, somewhat unassuming appearance. While attractive, a small spout limits the speed at which tea is brewed. To brew good tea, speed is essential. Pouring the water and dispensing most of the tea within 7–8 seconds ensures a refreshing, non-bitter brew.
However, the shape of the teapot significantly reduces the flow of tea. Sometimes, tea leaves can block the spout, stopping the tea from flowing out smoothly. When tea leaves are in prolonged contact with water in the teapot, they release excessive amounts of polyphenols and caffeine, resulting in a bitter, astringent taste. Therefore, bitterness is a common characteristic of tea brewed in a teapot. Unless the amount of tea leaves is reduced and the tea is diluted with a large amount of water, the bitterness cannot be mitigated. Consequently, the rich aroma and full flavour of the tea are also significantly weakened, resulting in a bland tea broth. Furthermore, the teapot lid prevents us from fully experiencing the front, middle and back notes of the aroma. In most cases, only a rough tea aroma is detected, making it difficult to distinguish the main and secondary notes, or changes in layers.
Ultimately, the most important thing is the mindset of the tea drinker, regardless of the type of tea set used. Choose a tea set you like, brew a pot of tea and enjoy the lifestyle that comes with it as you start your day.
